Easy Jamaican Jerk Chicken Legs with Cabbage Slaw

Step 1To prepare marinade & chicken: Whisk soy sauce, orange juice, lime juice, vegetable oil (or canola oil), onion, scallions, chile, ginger, garlic, allspice, thyme, cinnamon, nutmeg and paprika in a 9-by-13-inch baking dish. Add drumsticks, cover and refrigerate for at least 2 hours and up to 8 hours.
Step 2Preheat oven to 475°F and line a large rimmed baking sheet with parchment paper. Arrange the chicken on the prepared pan and bake until an instant-read thermometer inserted into the meatiest part registers 165°F and the exterior is nicely browned and crisped, about 25 minutes.
Step 3Meanwhile, prepare slaw: Whisk vinegar, olive oil, sugar, celery seed, salt and pepper in a large bowl. Add coleslaw mix and toss to coat. Refrigerate for at least 30 minutes to let the flavors meld. Serve the drumsticks with the slaw on the side.

Tip People with celiac disease or gluten sensitivity should use soy sauces that are labeled "gluten-free," as soy sauce may contain wheat or other gluten-containing ingredients.
